Fig Salad

Roughly dice 4 large or 8 smaller figs and add two tablespoons of finely diced walnuts, plus a similar amount of red onion......a dribble of evoo and balsamic and a sprinkle of herbamare salt and toss together - serves 4.

Kid goat baked in Apricots

 Take two backstraps (sliced into medallions) or 4 leg steaks and roll in rice flour.

Bake in oven for 45 minutes at 180c.  Meanwhile blend 1 tablespoon of honey in 300ml of hot water and add juice of 2 lemons and 2 tablespoons of tamari.  Halve 8 - 12 apricots.  Add these items to the well browned meat and swirl the pan to integrate the floured meat and liquid.  Return to oven for another 30 - 45 minutes, swirling the pan around again at around the halfway mark.  The idea is to have some thickened sauce left to serve on rice or cous cous.  Bottled apricots can be used and the kid meat could be replaced with chicken but I find lamb too greasy for this dish.  Serves 4
